CHEM 372 KITCHEN CHEMISTRY          (3+0) 3          5 ECTS

The goal of this course is to look at cooking from scientific basis. (LO 1) Kitchen chemistry is designed to be an experimental and hands on approach to applied chemistry. (LO 2) Each week an edible experiment will be done and science behind it will be studied. (LO 1, LO 2 ) To understand how it all works, chemical principles will be examined, in addition some biological, microbiological and may be little physics principles will be examined. (LO 3, LO 4 ) Kitchen chemistry class is prepared by using MIT opencourseware materials.
